Instructions:
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and minced garlic. Sauté until the onion is translucent.
Add the chopped bell peppers, sliced carrots, and diced potatoes. Cook for about 5 minutes.
Stir in the diced tomatoes, coconut milk, and vegetable broth.
Add the thyme, allspice, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 25-30 minutes, until the vegetables are tender.
Stir in the frozen peas and cook for another 5 minutes.
Garnish with chopped fresh cilantro before serving.
Notes:
This stew is perfect for a cozy dinner. Serve with rice or bread.
