Ingredients:  

Main Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 can diced tomatoes (400g)
  • 1 can coconut milk (400ml)
  • 2 cups vegetable broth
  • 1 tsp thyme dried
  • 1 tsp allspice ground
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup frozen peas
  • 1/4 cup fresh cilantro chopped

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and minced garlic. Sauté until the onion is translucent.
  • Add the chopped bell peppers, sliced carrots, and diced potatoes. Cook for about 5 minutes.
  • Stir in the diced tomatoes, coconut milk, and vegetable broth.
  • Add the thyme, allspice, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 25-30 minutes, until the vegetables are tender.
  • Stir in the frozen peas and cook for another 5 minutes.
  • Garnish with chopped fresh cilantro before serving.

Notes:

This stew is perfect for a cozy dinner. Serve with rice or bread.
