Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and sliced carrots. Cook until the onion is translucent.
3. Stir in the minced garlic and cook for another minute.
4. Add the soaked beans, vegetable broth, thyme, salt, and black pepper.
5. Bring to a boil, then reduce heat and let it simmer for about 45 minutes, or until the beans are tender.
6. Adjust seasoning if needed and serve hot.
Notes:
This stew is even better the next day. Store leftovers in the fridge.
