Instructions:
1. Heat a large pot over medium heat and add a bit of oil.
2. Add the beef stew meat and brown on all sides.
3. Add the chopped onion and garlic, cook until softened.
4. Add the carrots and potatoes, cook for a few minutes.
5. Pour in the beef broth, add salt, pepper, and thyme.
6. Bring to a boil, then reduce heat and simmer for about 2 hours.
7. Serve hot and enjoy!

Feel free to add other vegetables like peas or parsnips.
