Lamb shoulder, cut into chunks

Large potatoes, peeled and cubed

Carrots, peeled and sliced

Large onion, chopped

Beef or lamb stock

Instructions:
1. Heat a large pot over medium heat and add the lamb chunks. Brown the meat on all sides.
2. Add the chopped onion to the pot and cook until softened.
3. Add the potatoes, carrots, and stock to the pot. Bring to a boil.
4. Reduce the heat to low, cover, and let simmer for about 2 hours, or until the meat is tender.
5. Season with salt and black pepper to taste.
6. Garnish with chopped fresh parsley before serving.
Notes:
Feel free to add other root vegetables like parsnips or turnips for extra flavor.
