Ingredients:  

Main Ingredients

  • 2 lbs Lamb shoulder, cut into chunks
  • 4 Large potatoes, peeled and cubed
  • 3 Carrots, peeled and sliced
  • 1 Large onion, chopped
  • 4 cups Beef or lamb stock
  • 1 tsp Salt to taste
  • 1 tsp Black pepper to taste
  • 2 tbsp Chopped fresh parsley for garnish

Instructions: 

  • 1. Heat a large pot over medium heat and add the lamb chunks. Brown the meat on all sides.
  • 2. Add the chopped onion to the pot and cook until softened.
  • 3. Add the potatoes, carrots, and stock to the pot. Bring to a boil.
  • 4. Reduce the heat to low, cover, and let simmer for about 2 hours, or until the meat is tender.
  • 5. Season with salt and black pepper to taste.
  • 6. Garnish with chopped fresh parsley before serving.

Notes:

Feel free to add other root vegetables like parsnips or turnips for extra flavor.
