Ingredients:  

Main Ingredients

  • 1 lb Fish fillets (snapper or tilapia) cut into chunks
  • 2 tbsp Olive oil
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 Bell pepper chopped
  • 2 Tomatoes chopped
  • 1 cup Fish stock or water
  • 1 tsp Thyme dried
  • 1 tsp Salt or to taste
  • 1/2 tsp Black pepper or to taste
  • 1 Lime juiced
  • 2 sprigs Parsley chopped

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion, garlic, and bell pepper. Sauté until softened.
  • Add chopped tomatoes and cook for another 5 minutes.
  • Pour in fish stock or water, thyme, salt, and black pepper. Bring to a simmer.
  • Add fish chunks and lime juice. Simmer gently until fish is cooked through, about 10-15 minutes.
  • Garnish with chopped parsley and serve hot.

Notes:

Serve with rice or bread for a complete meal.
