Fish fillets (snapper or tilapia)

Instructions:
Heat olive oil in a large pot over medium heat.
Add chopped onion, garlic, and bell pepper. Sauté until softened.
Add chopped tomatoes and cook for another 5 minutes.
Pour in fish stock or water, thyme, salt, and black pepper. Bring to a simmer.
Add fish chunks and lime juice. Simmer gently until fish is cooked through, about 10-15 minutes.
Garnish with chopped parsley and serve hot.
Notes:
Serve with rice or bread for a complete meal.
