Beef shin

Beef broth

Instructions:
1. Heat olive oil in a Dutch oven over medium-high heat.
2. Brown the beef shin chunks on all sides. Remove and set aside.
3. In the same pot, sauté the onion, garlic, carrots, and celery until softened.
4. Add the tomato paste, thyme, salt, and pepper. Stir well.
5. Pour in the red wine and beef broth. Bring to a boil.
6. Return the beef to the pot. Add bay leaves.
7. Reduce heat to low, cover, and simmer for 3 hours or until beef is tender.
8. Adjust seasoning if needed. Serve hot.
Notes:
This stew is even better the next day. Store in the fridge and reheat gently.
