Ingredients:  

Main Ingredients

  • 2 lbs Beef shin cut into chunks
  • 2 tbsp Olive oil
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 2 Carrots sliced
  • 2 Celery stalks sliced
  • 2 cups Beef broth
  • 1 cup Red wine
  • 2 tbsp Tomato paste
  • 2 tsp Thyme dried
  • 1 tsp Salt to taste
  • 0.5 tsp Black pepper to taste
  • 2 pcs Bay leaves

Instructions: 

  • 1. Heat olive oil in a Dutch oven over medium-high heat.
  • 2. Brown the beef shin chunks on all sides. Remove and set aside.
  • 3. In the same pot, sauté the onion, garlic, carrots, and celery until softened.
  • 4. Add the tomato paste, thyme, salt, and pepper. Stir well.
  • 5. Pour in the red wine and beef broth. Bring to a boil.
  • 6. Return the beef to the pot. Add bay leaves.
  • 7. Reduce heat to low, cover, and simmer for 3 hours or until beef is tender.
  • 8. Adjust seasoning if needed. Serve hot.

Notes:

This stew is even better the next day. Store in the fridge and reheat gently.
