Ingredients:  

Main Ingredients

  • 2 cups Diced Potatoes
  • 1 cup Carrots, sliced
  • 1 cup Peas
  • 1 cup Corn
  • 4 cups Vegetable Broth
  • 1 tbsp Olive Oil
  • 1 tsp Salt
  • 1 tsp Black Pepper

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add diced potatoes and cook for 5 minutes.
  • 3. Add carrots, peas, and corn. Cook for another 5 minutes.
  • 4. Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 30 minutes.
  • 5. Season with salt and black pepper. Serve hot.

Notes:

Feel free to add your favorite vegetables.
