Instructions:
1. Heat the Dutch oven over medium heat.
2. Add beef stew meat and cook until browned.
3. Add chopped onions and garlic, cook until softened.
4. Pour in beef broth, add carrots, potatoes, salt, pepper, and thyme.
5. Bring to a boil, then reduce heat and simmer for 2 hours.
6. Serve hot and enjoy!
