Ingredients:  

Main Ingredients

  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground cinnamon
  • 1 tsp ground turmeric
  • 400 g chickpeas, drained and rinsed
  • 400 g diced tomatoes
  • 500 ml vegetable broth
  • 2 carrots, sliced
  • 1 zucchini, diced
  • 1 potato, diced
  • to taste salt and pepper

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and cook until translucent, about 5 minutes.
  • Stir in the minced garlic, cumin, coriander, cinnamon, and turmeric. Cook for another 2 minutes.
  • Add the chickpeas, diced tomatoes, vegetable broth, carrots, zucchini, and potato. Bring to a boil.
  • Reduce heat to low and let simmer for 30 minutes, or until vegetables are tender.
  • Season with salt and pepper to taste. Serve hot.

Notes:

This stew is perfect for a cozy dinner. Feel free to add more vegetables or spices to suit your taste.
