chickpeas, drained and rinsed

diced tomatoes

vegetable broth

carrots, sliced

zucchini, diced

potato, diced
to taste
salt and pepper
Instructions:
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until translucent, about 5 minutes.
Stir in the minced garlic, cumin, coriander, cinnamon, and turmeric. Cook for another 2 minutes.
Add the chickpeas, diced tomatoes, vegetable broth, carrots, zucchini, and potato. Bring to a boil.
Reduce heat to low and let simmer for 30 minutes, or until vegetables are tender.
Season with salt and pepper to taste. Serve hot.
Notes:
This stew is perfect for a cozy dinner. Feel free to add more vegetables or spices to suit your taste.
