Ingredients:  

Main Ingredients

  • 1 kg Beef Stew Meat cut into cubes
  • 2 tbsp Olive Oil
  • 1 Large Onion chopped
  • 3 cloves Garlic minced
  • 2 cups Beef Broth
  • 1 cup Tomato Sauce
  • 2 tsp Ground Cumin
  • 1 tsp Ground Coriander
  • 1 tsp Ground Cinnamon
  • 2 Bay Leaves
  • to taste Salt and Pepper
  • 2 Carrots sliced
  • 2 Potatoes cubed

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the beef cubes and brown on all sides. Remove and set aside.
  • 3. In the same pot, add the chopped onion and garlic. Sauté until softened.
  • 4. Return the beef to the pot. Add the beef broth, tomato sauce, cumin, coriander, cinnamon, bay leaves, salt, and pepper. Stir well.
  • 5. Bring to a boil, then reduce heat to low. Cover and simmer for 1.5 hours.
  • 6. Add the sliced carrots and cubed potatoes. Continue to simmer for another 30 minutes, or until vegetables are tender.
  • 7. Adjust seasoning if needed. Serve hot.

Notes:

This stew is perfect for a cozy dinner. Serve with rice or bread.
