Ingredients:  

Main Ingredients

  • 2 lbs Beef chuck, cut into cubes
  • 2 tbsp Olive oil
  • 1 large Onion, chopped
  • 3 cloves Garlic, minced
  • 2 cups Beef broth
  • 1 bottle Beer
  • 4 large Carrots, sliced
  • 4 large Potatoes, cubed
  • 2 tbsp Tomato paste
  • 1 tsp Thyme
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat. Add the beef and cook until browned on all sides. Remove the beef and set aside.
  • 2. In the same pot, add the onion and garlic. Cook until the onion is translucent.
  • 3. Return the beef to the pot. Add the beef broth, beer, carrots, potatoes, tomato paste, thyme, salt, and pepper. Stir to combine.
  • 4. Bring to a boil, then reduce the heat to low. Cover and simmer for about 2 hours, or until the beef is tender.
  • 5. Serve hot and enjoy!

Notes:

This beef stew is perfect for a cozy night in. Feel free to add other vegetables like peas or green beans.
