Instructions:
1. Heat the olive oil in a large pot over medium heat. Add the beef and cook until browned on all sides. Remove the beef and set aside.
2. In the same pot, add the onion and garlic. Cook until the onion is translucent.
3. Return the beef to the pot. Add the beef broth, beer, carrots, potatoes, tomato paste, thyme, salt, and pepper. Stir to combine.
4. Bring to a boil, then reduce the heat to low. Cover and simmer for about 2 hours, or until the beef is tender.
5. Serve hot and enjoy!

This beef stew is perfect for a cozy night in. Feel free to add other vegetables like peas or green beans.
