Ingredients:  

Main Ingredients

  • 1 lb rockfish fillets cut into chunks
  • 2 potatoes peeled and diced
  • 1 cup carrots sliced
  • 1 cup celery sliced
  • 1 can diced tomatoes 14.5 oz
  • 4 cups fish stock
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tsp thyme dried
  • 1 tsp paprika

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat. Add onions and garlic, and sauté until softened.
  • 2. Add carrots and celery, and cook for another 5 minutes.
  • 3. Stir in diced tomatoes, fish stock, potatoes, thyme, paprika, salt, and pepper. Bring to a boil.
  • 4. Reduce heat and simmer for 20 minutes, or until potatoes are tender.
  • 5. Add rockfish chunks and cook for another 5-7 minutes, until fish is cooked through.
  • 6. Serve hot, garnished with fresh herbs if desired.

Notes:

Feel free to add other seafood like shrimp or clams for extra flavor.
