Ingredients:  

Main Ingredients

  • 1 lb Chicken breast diced
  • 1 can Black beans drained and rinsed
  • 1 can Corn drained
  • 1 can Diced tomatoes
  • 1 packet Taco seasoning
  • 2 cups Chicken broth
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 tbsp Olive oil

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the onion and garlic, and sauté until softened.
  • Add the diced chicken breast and cook until no longer pink.
  • Stir in the taco seasoning, black beans, corn, diced tomatoes, and chicken broth.
  • Bring to a boil, then reduce heat and simmer for 20 minutes.
  • Serve hot, garnished with your favorite toppings like cheese, sour cream, and cilantro.

Notes:

Feel free to add more vegetables or adjust the seasoning to your taste.
