Instructions:
1. Heat the vegetable oil in a large pot over medium heat.
2. Add the chopped onion and minced garlic, and sauté until fragrant.
3. Add the soaked beans, water, thyme, salt, and black pepper.
4. Bring to a boil, then reduce heat and simmer for about 2 hours, or until beans are tender.
5. Stir in the coconut milk and cook for an additional 10 minutes.
6. Adjust seasoning if necessary and serve hot.
Notes:
This dish pairs well with rice or fresh tortillas.
