Ingredients:  

Main Ingredients

  • 2 cups Red Kidney Beans soaked overnight
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 tbsp Vegetable Oil
  • 1 tsp Salt to taste
  • 1 tsp Black Pepper to taste
  • 1 tsp Thyme dried
  • 1 cup Coconut Milk
  • 4 cups Water

Instructions: 

  • 1. Heat the vegetable oil in a large pot over medium heat.
  • 2. Add the chopped onion and minced garlic, and sauté until fragrant.
  • 3. Add the soaked beans, water, thyme, salt, and black pepper.
  • 4. Bring to a boil, then reduce heat and simmer for about 2 hours, or until beans are tender.
  • 5. Stir in the coconut milk and cook for an additional 10 minutes.
  • 6. Adjust seasoning if necessary and serve hot.

Notes:

This dish pairs well with rice or fresh tortillas.
