Ingredients:  

Main Ingredients

  • 500 g Okra trimmed
  • 2 Tomatoes chopped
  • 1 Onion chopped
  • 3 cloves Garlic minced
  • 2 tbsp Olive oil
  • 1 tsp Ground coriander
  • 1 tsp Ground cumin
  • 1 tsp Salt or to taste
  • 1/2 tsp Black pepper or to taste
  • 2 cups Vegetable broth

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the chopped onion and garlic, and sauté until they are soft and fragrant.
  • 3. Add the chopped tomatoes, ground coriander, ground cumin, salt, and black pepper. Cook for about 5 minutes.
  • 4. Add the okra and vegetable broth. Bring to a boil, then reduce the heat and let it simmer for about 30-40 minutes, until the okra is tender.
  • 5. Serve hot with rice or bread.

This stew is perfect for a cozy dinner and pairs well with rice or flatbread.
