Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the chicken pieces and cook until browned on all sides.
3. Remove the chicken and set aside.
4. In the same pot, add the onions, garlic, carrots, and celery. Cook until softened.
5. Add the chicken back to the pot along with the chicken broth, diced tomatoes, salt, pepper, thyme, and paprika.
6. Bring to a boil, then reduce heat and simmer for 30 minutes.
7. Serve hot and enjoy!
