Ingredients:  

Main Ingredients

  • 1 whole Chicken cut into pieces
  • 2 cups Chicken Broth
  • 1 cup Diced Tomatoes
  • 1 cup Chopped Onions
  • 2 cloves Garlic minced
  • 1 cup Chopped Carrots
  • 1 cup Chopped Celery
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Thyme dried
  • 1 tsp Paprika
  • 2 tbsp Olive Oil

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the chicken pieces and cook until browned on all sides.
  • 3. Remove the chicken and set aside.
  • 4. In the same pot, add the onions, garlic, carrots, and celery. Cook until softened.
  • 5. Add the chicken back to the pot along with the chicken broth, diced tomatoes, salt, pepper, thyme, and paprika.
  • 6. Bring to a boil, then reduce heat and simmer for 30 minutes.
  • 7. Serve hot and enjoy!

Notes:

This stew is even better the next day!
