Instructions:
Heat olive oil in a large pot over medium heat.
Add diced onion and garlic, sauté until translucent.
Add chicken thighs, cook until browned on all sides.
Stir in smoked tomatoes, carrots, and potatoes.
Pour in chicken broth, add smoked paprika, thyme, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 30-35 minutes, until vegetables are tender.
Serve hot.
