Ingredients:  

Main Ingredients

  • 4 boneless, skinless chicken thighs
  • 2 cups smoked tomatoes, chopped
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup diced carrots
  • 1 cup diced potatoes
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add diced onion and garlic, sauté until translucent.
  • Add chicken thighs, cook until browned on all sides.
  • Stir in smoked tomatoes, carrots, and potatoes.
  • Pour in chicken broth, add smoked paprika, thyme, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for 30-35 minutes, until vegetables are tender.
  • Serve hot.
