Ingredients:  

Main Ingredients

  • 2 lbs Beef chuck, cut into chunks
  • 4 cups Water
  • 2 cups Beef broth
  • 1 large Onion, chopped
  • 2 cloves Garlic, minced
  • 2 large Carrots, sliced
  • 2 large Potatoes, cubed
  • 1 cup Green beans, chopped
  • 1 cup Corn kernels
  • 1 cup Chayote squash, cubed
  • 1 tsp Salt to taste
  • 1 tsp Black pepper to taste

Instructions: 

  • 1. In a large pot, add the beef chunks and cover with water and beef broth. Bring to a boil, then reduce heat and simmer for 1 hour.
  • 2. Add the chopped onion and minced garlic. Cook for another 30 minutes.
  • 3. Add the carrots, potatoes, green beans, corn, and chayote squash. Season with salt and black pepper. Simmer for another 30 minutes or until vegetables are tender.
  • 4. Adjust seasoning if necessary. Serve hot.

This hearty stew is perfect for a family dinner.
