1. In a large pot, add the beef chunks and cover with water and beef broth. Bring to a boil, then reduce heat and simmer for 1 hour.
2. Add the chopped onion and minced garlic. Cook for another 30 minutes.
3. Add the carrots, potatoes, green beans, corn, and chayote squash. Season with salt and black pepper. Simmer for another 30 minutes or until vegetables are tender.
