Ingredients:  

Main Ingredients

  • 3 lbs oxtail
  • 2 tbsp vegetable oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 large bell pepper, chopped
  • 2 cups beef broth
  • 1 can tomato paste
  • 2 tsp thyme
  • 1 tsp allspice
  • to taste salt and pepper

Instructions: 

  • 1. Heat the oil in a large pot over medium-high heat. Brown the oxtail pieces on all sides.
  • 2. Remove the oxtail and set aside. In the same pot, sauté the onion, garlic, and bell pepper until softened.
  • 3. Add the tomato paste, thyme, and allspice. Cook for another 2 minutes.
  • 4. Return the oxtail to the pot. Pour in the beef broth and bring to a boil.
  • 5. Reduce heat to low, cover, and simmer for about 3 hours or until the oxtail is tender.
  • 6. Season with salt and pepper to taste. Serve hot.

Notes:

This stew is even better the next day, as the flavors have more time to meld together.
