vegetable oil

onion, chopped

cloves
garlic, minced

bell pepper, chopped

beef broth

tomato paste

tsp
thyme

tsp
allspice
to taste
salt and pepper
Instructions:
1. Heat the oil in a large pot over medium-high heat. Brown the oxtail pieces on all sides.
2. Remove the oxtail and set aside. In the same pot, sauté the onion, garlic, and bell pepper until softened.
3. Add the tomato paste, thyme, and allspice. Cook for another 2 minutes.
4. Return the oxtail to the pot. Pour in the beef broth and bring to a boil.
5. Reduce heat to low, cover, and simmer for about 3 hours or until the oxtail is tender.
6. Season with salt and pepper to taste. Serve hot.
Notes:
This stew is even better the next day, as the flavors have more time to meld together.
