Olive Oil
Instructions:
1. Heat olive oil in a Dutch oven over medium-high heat.
2. Brown the chuck roast chunks on all sides. Remove and set aside.
3. In the same pot, add onions and garlic. Sauté until softened.
4. Add beef broth, carrots, potatoes, salt, and pepper. Bring to a boil.
5. Return the browned chuck roast to the pot. Reduce heat, cover, and simmer for 3 hours or until meat is tender.
6. Adjust seasoning if needed. Serve hot.
Notes:
For a thicker stew, you can add a slurry of cornstarch and water towards the end of cooking.
