Ingredients:  

Main Ingredients

  • 2 lbs Chuck Roast cut into chunks
  • 4 cups Beef Broth
  • 3 pcs Carrots sliced
  • 3 pcs Potatoes diced
  • 1 pc Onion chopped
  • 2 cloves Garlic minced
  • 2 tsp Salt to taste
  • 1 tsp Black Pepper to taste
  • 2 tbsp Olive Oil

Instructions: 

  • 1. Heat olive oil in a Dutch oven over medium-high heat.
  • 2. Brown the chuck roast chunks on all sides. Remove and set aside.
  • 3. In the same pot, add onions and garlic. Sauté until softened.
  • 4. Add beef broth, carrots, potatoes, salt, and pepper. Bring to a boil.
  • 5. Return the browned chuck roast to the pot. Reduce heat, cover, and simmer for 3 hours or until meat is tender.
  • 6. Adjust seasoning if needed. Serve hot.

Notes:

For a thicker stew, you can add a slurry of cornstarch and water towards the end of cooking.
