Instructions:
Heat the olive oil in a large pot over medium heat.
Add the beef stew meat and cook until browned on all sides.
Add the chopped onion and minced garlic, and cook until the onion is translucent.
Pour in the beef broth and diced tomatoes. Stir well.
Add the sliced carrots and cubed potatoes. Season with salt, black pepper, and paprika.
Bring to a boil, then reduce heat to low and simmer for about 60 minutes, or until the vegetables are tender and the meat is cooked through.
Serve hot and enjoy!
