Ingredients:  

Main Ingredients

  • 1 cup dried black-eyed peas soaked overnight
  • 1 medium onion chopped
  • 1 cup celery chopped
  • 1 cup carrot chopped
  • 3 cloves garlic minced
  • 1 can diced tomatoes 14.5 oz
  • 4 cups vegetable broth
  • 1 tsp smoked paprika
  • 1 tsp thyme dried
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper freshly ground
  • 2 cups kale chopped
  • 1 tbsp olive oil

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add chopped onion, celery, and carrot. Cook until softened, about 5-7 minutes.
  • 3. Stir in minced garlic and cook for another minute.
  • 4. Add soaked black-eyed peas, diced tomatoes, vegetable broth, smoked paprika, thyme, salt, and black pepper. Bring to a boil.
  • 5. Reduce heat to low and simmer for 30-35 minutes, or until black-eyed peas are tender.
  • 6. Stir in chopped kale and cook for an additional 5 minutes.
  • 7. Adjust seasoning to taste and serve hot.

Notes:

This stew is perfect for a cozy dinner and is even better the next day!
