Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion, celery, and carrot. Cook until softened, about 5-7 minutes.
3. Stir in minced garlic and cook for another minute.
4. Add soaked black-eyed peas, diced tomatoes, vegetable broth, smoked paprika, thyme, salt, and black pepper. Bring to a boil.
5. Reduce heat to low and simmer for 30-35 minutes, or until black-eyed peas are tender.
6. Stir in chopped kale and cook for an additional 5 minutes.
7. Adjust seasoning to taste and serve hot.
Notes:
This stew is perfect for a cozy dinner and is even better the next day!
