Olive oil
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the beef and cook until browned on all sides.
3. Add the onions and garlic, and cook until softened.
4. Stir in the tomato paste, salt, and pepper.
5. Pour in the beef broth, bring to a boil, then reduce to a simmer.
6. Add the carrots and potatoes, cover, and simmer for 1.5 to 2 hours, or until the meat is tender.
7. Adjust seasoning if necessary and serve hot.
Notes:
For a thicker stew, you can add a slurry of cornstarch and water during the last 10 minutes of cooking.
