Ingredients:  

Main Ingredients

  • 1 lb Beef round steak cut into cubes
  • 2 cups Beef broth
  • 1 cup Carrots sliced
  • 1 cup Potatoes diced
  • 1 cup Onions chopped
  • 2 cloves Garlic minced
  • 1 tbsp Tomato paste
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 2 tbsp Olive oil

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the beef and cook until browned on all sides.
  • 3. Add the onions and garlic, and cook until softened.
  • 4. Stir in the tomato paste, salt, and pepper.
  • 5. Pour in the beef broth, bring to a boil, then reduce to a simmer.
  • 6. Add the carrots and potatoes, cover, and simmer for 1.5 to 2 hours, or until the meat is tender.
  • 7. Adjust seasoning if necessary and serve hot.

Notes:

For a thicker stew, you can add a slurry of cornstarch and water during the last 10 minutes of cooking.
