Instructions:
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until soft, about 5 minutes.
Stir in the minced garlic, ground cumin, and ground paprika. Cook for another minute.
Add the diced tomatoes, vegetable broth, and chickpeas. Bring to a boil.
Reduce the heat and let it simmer for about 30 minutes.
Season with salt and black pepper. Stir in the fresh parsley before serving.
Notes:
Serve with crusty bread or over rice for a complete meal.
