Ingredients:  

Main Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground paprika
  • 1 can diced tomatoes (14 oz)
  • 2 cups vegetable broth
  • 2 cans chickpeas, drained and rinsed (15 oz each)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup fresh parsley, chopped

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and cook until soft, about 5 minutes.
  • Stir in the minced garlic, ground cumin, and ground paprika. Cook for another minute.
  • Add the diced tomatoes, vegetable broth, and chickpeas. Bring to a boil.
  • Reduce the heat and let it simmer for about 30 minutes.
  • Season with salt and black pepper. Stir in the fresh parsley before serving.

Notes:

Serve with crusty bread or over rice for a complete meal.
