Ingredients:  

Main Ingredients

  • 1 cup Lentils rinsed
  • 1 cup Canned Beans drained and rinsed
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 2 cups Vegetable Broth
  • 1 cup Diced Tomatoes canned
  • 1 tsp Cumin
  • 1 tsp Paprika
  • to taste Salt and Pepper

Instructions: 

  • 1. In a large pot, heat some oil over medium heat. Add the chopped onion and cook until translucent.
  • 2. Add the minced garlic and cook for another minute.
  • 3. Stir in the cumin and paprika, cooking for another 30 seconds.
  • 4. Add the lentils, beans, vegetable broth, and diced tomatoes. Bring to a boil.
  • 5. Reduce heat to low and let it simmer for about 45 minutes, or until lentils are tender.
  • 6. Season with salt and pepper to taste. Serve hot.

Notes:

Feel free to add other vegetables like carrots or spinach for extra nutrition.
