Salt and Pepper
Instructions:
1. In a large pot, heat some oil over medium heat. Add the chopped onion and cook until translucent.
2. Add the minced garlic and cook for another minute.
3. Stir in the cumin and paprika, cooking for another 30 seconds.
4. Add the lentils, beans, vegetable broth, and diced tomatoes. Bring to a boil.
5. Reduce heat to low and let it simmer for about 45 minutes, or until lentils are tender.
6. Season with salt and pepper to taste. Serve hot.
Notes:
Feel free to add other vegetables like carrots or spinach for extra nutrition.
