Ingredients:  

Main Ingredients

  • 1 kg Lamb shoulder, cut into chunks
  • 4 Carrots, sliced
  • 4 Potatoes, peeled and cubed
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 liter Beef stock
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1 tbsp Fresh thyme, chopped

Instructions: 

  • 1. Heat a large pot over medium heat and add a bit of oil.
  • 2. Add the lamb and brown on all sides.
  • 3. Add the onions and garlic, cook until softened.
  • 4. Pour in the beef stock and bring to a boil.
  • 5. Add the carrots, potatoes, salt, pepper, and thyme.
  • 6. Reduce heat to low, cover, and simmer for about 2 hours.
  • 7. Check seasoning and adjust if necessary. Serve hot.

Notes:

Feel free to add other root vegetables like parsnips or turnips.
