Lamb shoulder, cut into chunks

Carrots, sliced

Potatoes, peeled and cubed

Onion, chopped

Garlic, minced

Beef stock

Fresh thyme, chopped
Instructions:
1. Heat a large pot over medium heat and add a bit of oil.
2. Add the lamb and brown on all sides.
3. Add the onions and garlic, cook until softened.
4. Pour in the beef stock and bring to a boil.
5. Add the carrots, potatoes, salt, pepper, and thyme.
6. Reduce heat to low, cover, and simmer for about 2 hours.
7. Check seasoning and adjust if necessary. Serve hot.
Notes:
Feel free to add other root vegetables like parsnips or turnips.
