Ingredients:  

Main Ingredients

  • 500 g Beef chuck cut into cubes
  • 2 tbsp Olive oil
  • 1 Onion chopped
  • 2 Carrots chopped
  • 2 cloves Garlic minced
  • 400 g Canned tomatoes
  • 500 ml Beef broth
  • 2 Bay leaves
  • 1 tsp Dried thyme
  • to taste Salt and pepper
  • 2 Potatoes peeled and chopped

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add beef and brown on all sides. Remove and set aside.
  • In the same pot, add onion, carrots, and garlic. Cook until softened.
  • Return beef to the pot. Add canned tomatoes, beef broth, bay leaves, thyme, salt, and pepper. Bring to a boil.
  • Reduce heat, cover, and simmer for 1 hour.
  • Add potatoes and cook for another 30 minutes, or until tender.
  • Remove bay leaves before serving.

Notes:

Great served with crusty bread.
