Annatto Oil

Fish Sauce

Salt and Pepper
Instructions:
1. In a large pot, heat annatto oil over medium heat. Sauté garlic and onion until fragrant.
2. Add oxtail and cook until browned on all sides.
3. Pour in beef broth and bring to a boil. Reduce heat and simmer for about 1.5 to 2 hours, or until oxtail is tender.
4. Stir in peanut butter and fish sauce. Mix well until peanut butter is fully dissolved.
5. Add banana flower, eggplant, and bok choy. Cook for another 10-15 minutes, or until vegetables are tender.
6. Season with salt and pepper to taste. Serve hot with rice and enjoy!
Notes:
Traditionally served with bagoong (fermented shrimp paste) on the side.
