Ingredients:  

Main Ingredients

  • 2 lbs Oxtail
  • 1 cup Peanut Butter
  • 4 cups Beef Broth
  • 1 piece Banana Flower sliced
  • 1 bunch Bok Choy chopped
  • 1 piece Eggplant sliced
  • 1 piece Onion chopped
  • 2 cloves Garlic minced
  • 2 tbsp Annatto Oil
  • 1 tbsp Fish Sauce
  • to taste Salt and Pepper

Instructions: 

  • 1. In a large pot, heat annatto oil over medium heat. Sauté garlic and onion until fragrant.
  • 2. Add oxtail and cook until browned on all sides.
  • 3. Pour in beef broth and bring to a boil. Reduce heat and simmer for about 1.5 to 2 hours, or until oxtail is tender.
  • 4. Stir in peanut butter and fish sauce. Mix well until peanut butter is fully dissolved.
  • 5. Add banana flower, eggplant, and bok choy. Cook for another 10-15 minutes, or until vegetables are tender.
  • 6. Season with salt and pepper to taste. Serve hot with rice and enjoy!

Notes:

Traditionally served with bagoong (fermented shrimp paste) on the side.
