Peanut Butter

Chicken Broth

Onion, chopped

Garlic, minced

Tomato, chopped

Vegetables (carrots, potatoes, etc.), chopped
Instructions:
1. Heat oil in a large pot over medium heat. Add chicken pieces and cook until browned. Remove chicken and set aside.
2. In the same pot, add chopped onion and garlic. Cook until softened.
3. Stir in chopped tomato and tomato paste. Cook for a few minutes.
4. Add peanut butter and chicken broth. Stir until well combined.
5. Return chicken to the pot. Add salt, pepper, and chopped vegetables. Bring to a boil, then reduce heat and simmer for 30 minutes.
6. Serve hot with rice or bread.
Notes:
This stew is even better the next day!
