Ingredients:  

Main Ingredients

  • 1 cup Peanut Butter
  • 1 lb Chicken, cut into pieces
  • 2 cups Chicken Broth
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 Tomato, chopped
  • 2 tbsp Tomato Paste
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 2 cups Vegetables (carrots, potatoes, etc.), chopped

Instructions: 

  • 1. Heat oil in a large pot over medium heat. Add chicken pieces and cook until browned. Remove chicken and set aside.
  • 2. In the same pot, add chopped onion and garlic. Cook until softened.
  • 3. Stir in chopped tomato and tomato paste. Cook for a few minutes.
  • 4. Add peanut butter and chicken broth. Stir until well combined.
  • 5. Return chicken to the pot. Add salt, pepper, and chopped vegetables. Bring to a boil, then reduce heat and simmer for 30 minutes.
  • 6. Serve hot with rice or bread.

Notes:

This stew is even better the next day!
