Instructions:
1. Heat a large pot over medium heat and add a bit of oil.
2. Brown the chicken legs on all sides, then remove and set aside.
3. In the same pot, sauté onions and garlic until fragrant.
4. Add carrots and potatoes, cooking for a few minutes.
5. Pour in the chicken broth and bring to a boil.
6. Return the chicken legs to the pot, add salt, pepper, and thyme.
7. Reduce heat and let simmer for 30-35 minutes, or until chicken is cooked through and vegetables are tender.
8. Serve hot and enjoy!
Notes:
Feel free to add other vegetables like peas or corn for extra flavor.
