Ingredients:  

Main Ingredients

  • 1 whole Chicken cut into pieces
  • 1 cup Sofrito homemade or store-bought
  • 2 cups Chicken Broth
  • 1 cup Diced Tomatoes canned
  • 1 tsp Salt to taste
  • 1 tsp Black Pepper to taste
  • 2 tbsp Olive Oil
  • 1 cup Diced Potatoes
  • 1 cup Diced Carrots

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the chicken pieces and brown on all sides.
  • 3. Stir in the sofrito and cook for 5 minutes.
  • 4. Add the chicken broth, diced tomatoes, salt, and pepper. Bring to a boil.
  • 5. Reduce heat to low and simmer for 30 minutes.
  • 6. Add the diced potatoes and carrots. Cook for another 15 minutes or until vegetables are tender.
  • 7. Serve hot and enjoy!

Notes:

This stew is even better the next day, so feel free to make it ahead of time.
