Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the chicken pieces and brown on all sides.
3. Stir in the sofrito and cook for 5 minutes.
4. Add the chicken broth, diced tomatoes, salt, and pepper. Bring to a boil.
5. Reduce heat to low and simmer for 30 minutes.
6. Add the diced potatoes and carrots. Cook for another 15 minutes or until vegetables are tender.
7. Serve hot and enjoy!
Notes:
This stew is even better the next day, so feel free to make it ahead of time.
