garlic

stalks
celery

bottle
beer

beef broth

tomato paste

tbsp
flour

tbsp
olive oil

tsp
thyme

bay leaf
Salt and pepper
to taste
Instructions:
Heat olive oil in a large pot over medium heat. Add beef and brown on all sides.
Remove beef and set aside. In the same pot, add onions, garlic, carrots, and celery. Cook until softened.
Stir in flour and tomato paste. Cook for a minute.
Pour in beer, scraping up any browned bits from the bottom of the pot.
Add beef broth, thyme, bay leaf, and browned beef. Bring to a boil.
Reduce heat, cover, and simmer for 2 hours, or until beef is tender.
Season with salt and pepper to taste. Serve hot.
