Ingredients:  

Main Ingredients

  • 2 lbs beef chuck cut into 1-inch cubes
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 2 carrots sliced
  • 2 stalks celery chopped
  • 1 bottle beer 12 oz
  • 2 cups beef broth
  • 2 tbsp tomato paste
  • 2 tbsp flour
  • 2 tbsp olive oil
  • 1 tsp thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions: 

  • Heat olive oil in a large pot over medium heat. Add beef and brown on all sides.
  • Remove beef and set aside. In the same pot, add onions, garlic, carrots, and celery. Cook until softened.
  • Stir in flour and tomato paste. Cook for a minute.
  • Pour in beer, scraping up any browned bits from the bottom of the pot.
  • Add beef broth, thyme, bay leaf, and browned beef. Bring to a boil.
  • Reduce heat, cover, and simmer for 2 hours, or until beef is tender.
  • Season with salt and pepper to taste. Serve hot.
