Ingredients:  

Main Ingredients

  • 1 kg Beef chuck cut into cubes
  • 1 can Coconut milk 400ml
  • 2 cups Beef broth
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 1 tbsp Ginger grated
  • 2 tbsp Curry powder
  • 2 tbsp Vegetable oil
  • to taste Salt
  • to taste Black pepper

Instructions: 

  • 1. Heat the oil in a large pot over medium heat. Add the onion, garlic, and ginger, and cook until softened.
  • 2. Add the beef and cook until browned on all sides.
  • 3. Stir in the curry powder and cook for another minute.
  • 4. Pour in the coconut milk and beef broth. Bring to a boil, then reduce the heat and simmer for 1.5 to 2 hours, or until the beef is tender.
  • 5. Season with salt and pepper to taste. Serve hot.

Notes:

This stew pairs well with steamed rice or crusty bread.
