Instructions:
Heat oil in a large pot over medium heat.
Add the beef and cook until browned on all sides.
Add the onions and garlic, cook until softened.
Stir in the tomatoes and tomato paste, cook for a few minutes.
Pour in the beef broth, add the carrots and potatoes.
Season with salt, pepper, paprika, and cumin. Bring to a boil.
Reduce heat, cover, and simmer for about 45 minutes, until the beef is tender.
Adjust seasoning if necessary and serve hot.
Notes:
This stew goes well with rice or chapati.
