Ingredients:  

Main Ingredients

  • 500 g Beef, cubed preferably chuck or brisket
  • 2 Onions, chopped
  • 3 cloves Garlic, minced
  • 2 Tomatoes, chopped
  • 2 tbsp Tomato paste
  • 2 cups Beef broth
  • 2 Carrots, sliced
  • 2 Potatoes, cubed
  • 1 tsp Salt to taste
  • 1 tsp Black pepper to taste
  • 1 tsp Paprika
  • 1 tsp Cumin
  • 1 tbsp Vegetable oil

Instructions: 

  • Heat oil in a large pot over medium heat.
  • Add the beef and cook until browned on all sides.
  • Add the onions and garlic, cook until softened.
  • Stir in the tomatoes and tomato paste, cook for a few minutes.
  • Pour in the beef broth, add the carrots and potatoes.
  • Season with salt, pepper, paprika, and cumin. Bring to a boil.
  • Reduce heat, cover, and simmer for about 45 minutes, until the beef is tender.
  • Adjust seasoning if necessary and serve hot.

Notes:

This stew goes well with rice or chapati.
