Instructions:
1. Blend the red bell peppers, tomatoes, and half of the onion until smooth.
2. Heat the vegetable oil in a large pot over medium heat.
3. Add the remaining chopped onion and minced garlic to the pot. Sauté until fragrant.
4. Pour the blended mixture into the pot. Stir well.
5. Season with salt, black pepper, and paprika. Let it simmer for about 45 minutes, stirring occasionally.
6. Adjust seasoning if necessary. Serve hot.
Notes:
This stew pairs well with rice or any preferred side dish.
