Ingredients:

Beef chuck, cut into 1-inch cubes

Beef broth

Red wine

Carrots, sliced

Potatoes, diced

Onion, chopped

cloves
Garlic, minced

Tomato paste

Dried thyme

Olive oil
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the beef cubes and brown on all sides. Remove and set aside.
3. In the same pot, add the onions and garlic. Cook until softened.
4. Stir in the tomato paste and cook for another minute.
5. Return the beef to the pot. Add the beef broth, red wine, thyme, salt, and pepper.
6. Bring to a boil, then reduce heat and simmer for 1.5 hours.
7. Add the carrots and potatoes. Simmer for another 30 minutes or until vegetables are tender.
8. Adjust seasoning if necessary. Serve hot.
Notes:
This beef stew is even better the next day!
