Ingredients:  

Main Ingredients

  • 2 lbs Beef chuck, cut into 1-inch cubes
  • 3 cups Beef broth
  • 1 cup Red wine optional
  • 2 cups Carrots, sliced
  • 2 cups Potatoes, diced
  • 1 cup Onion, chopped
  • 3 cloves Garlic, minced
  • 2 tbsp Tomato paste
  • 1 tsp Dried thyme
  • 1 tsp Salt to taste
  • 0.5 tsp Black pepper to taste
  • 2 tbsp Olive oil

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the beef cubes and brown on all sides. Remove and set aside.
  • 3. In the same pot, add the onions and garlic. Cook until softened.
  • 4. Stir in the tomato paste and cook for another minute.
  • 5. Return the beef to the pot. Add the beef broth, red wine, thyme, salt, and pepper.
  • 6. Bring to a boil, then reduce heat and simmer for 1.5 hours.
  • 7. Add the carrots and potatoes. Simmer for another 30 minutes or until vegetables are tender.
  • 8. Adjust seasoning if necessary. Serve hot.

Notes:

This beef stew is even better the next day!
