Ingredients:  

Main Ingredients

  • 1 lb Chicken thighs, boneless and skinless cut into bite-sized pieces
  • 2 cups Dashi stock
  • 1 cup Carrots sliced
  • 1 cup Potatoes diced
  • 1 cup Onions sliced
  • 2 tbsp Soy sauce
  • 2 tbsp Mirin
  • 1 tbsp Sugar
  • 1 tbsp Sake

Instructions: 

  • 1. Heat the large pot over medium heat and add the chicken pieces. Cook until lightly browned.
  • 2. Add the dashi stock, carrots, potatoes, and onions to the pot. Bring to a boil.
  • 3. Reduce the heat to low and add soy sauce, mirin, sugar, and sake. Simmer for 30 minutes or until the vegetables are tender.
  • 4. Serve hot and enjoy your Japanese Chicken Stew!

Notes:

Feel free to add other vegetables like mushrooms or daikon radish.
