Instructions:
1. Heat the large pot over medium heat and add the chicken pieces. Cook until lightly browned.
2. Add the dashi stock, carrots, potatoes, and onions to the pot. Bring to a boil.
3. Reduce the heat to low and add soy sauce, mirin, sugar, and sake. Simmer for 30 minutes or until the vegetables are tender.
