firm white fish, cut into chunks

fish stock or water

fresh parsley, chopped
for garnish
Instructions:
Heat the oil in a large pot over medium heat.
Add the chopped onion and cook until soft.
Stir in the garlic and ginger, cooking for another minute.
Add the crushed tomatoes, tomato paste, paprika, and cayenne pepper. Cook for 10 minutes, stirring occasionally.
Add the fish chunks and fish stock. Season with salt and black pepper.
Simmer for 20-25 minutes, until the fish is cooked through.
Garnish with fresh parsley before serving.
Notes:
Serve with rice or boiled plantains for a complete meal.
