Ingredients:  

Main Ingredients

  • 2 tbsp vegetable oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 can tomatoes, crushed (400g)
  • 1 tbsp tomato paste
  • 1 tsp paprika
  • 1 tsp cayenne pepper
  • 500 g firm white fish, cut into chunks
  • 1 cup fish stock or water (240ml)
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
  • 1 handful fresh parsley, chopped for garnish

Instructions: 

  • Heat the oil in a large pot over medium heat.
  • Add the chopped onion and cook until soft.
  • Stir in the garlic and ginger, cooking for another minute.
  • Add the crushed tomatoes, tomato paste, paprika, and cayenne pepper. Cook for 10 minutes, stirring occasionally.
  • Add the fish chunks and fish stock. Season with salt and black pepper.
  • Simmer for 20-25 minutes, until the fish is cooked through.
  • Garnish with fresh parsley before serving.

Notes:

Serve with rice or boiled plantains for a complete meal.
