Ingredients:  

Main Ingredients

  • 1 lb Chicken Thighs boneless, skinless
  • 2 cups Tomatoes diced
  • 1 cup Chicken Broth
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Paprika
  • 1 tbsp Olive Oil

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the chopped onion and minced garlic, and sauté until softened.
  • 3. Add the chicken thighs and cook until browned on all sides.
  • 4. Stir in the diced tomatoes, chicken broth, salt, pepper, and paprika.
  • 5. Bring to a boil, then reduce heat and let it simmer for 30-35 minutes, or until the chicken is cooked through and tender.
  • 6. Serve hot and enjoy!

Notes:

Feel free to add other vegetables like carrots or potatoes for extra heartiness.
