Ingredients:  

Main Ingredients

  • 2 lbs oxtail
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 tomatoes, chopped
  • 2 tbsp tomato paste
  • 1 cup beef broth
  • 1 tsp thyme
  • 1 tsp oregano
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions: 

  • Heat oil in a large pot over medium heat. Brown the oxtail on all sides.
  • Add onion, garlic, and bell pepper. Cook until softened.
  • Stir in tomatoes, tomato paste, thyme, and oregano.
  • Pour in beef broth, bring to a boil, then reduce heat and simmer for 2 hours.
  • Season with salt and pepper to taste.

Notes:

Serve with rice or mashed potatoes.
