Salt and pepper to taste
Instructions:
Heat oil in a large pot over medium heat. Brown the oxtail on all sides.
Add onion, garlic, and bell pepper. Cook until softened.
Stir in tomatoes, tomato paste, thyme, and oregano.
Pour in beef broth, bring to a boil, then reduce heat and simmer for 2 hours.
Season with salt and pepper to taste.
Notes:
Serve with rice or mashed potatoes.
