Instructions:
Heat olive oil in a large pot over medium heat.
Add onion, garlic, and red bell pepper. Cook until softened.
Stir in smoked paprika and saffron threads.
Add diced tomatoes and fish stock. Bring to a simmer.
Add mixed seafood and cook until seafood is cooked through.
Season with salt and pepper.
Garnish with fresh parsley before serving.
Notes:
