Ingredients:  

Main Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 tsp smoked paprika
  • 0.5 tsp saffron threads
  • 1 can diced tomatoes (14 oz)
  • 4 cups fish stock
  • 1 lb mixed seafood (shrimp, mussels, clams, squid)
  • to taste salt and pepper
  • to garnish fresh parsley, chopped

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add onion, garlic, and red bell pepper. Cook until softened.
  • Stir in smoked paprika and saffron threads.
  • Add diced tomatoes and fish stock. Bring to a simmer.
  • Add mixed seafood and cook until seafood is cooked through.
  • Season with salt and pepper.
  • Garnish with fresh parsley before serving.

Notes:

Serve with crusty bread for a complete meal.
