Ingredients:  

Main Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 3 potatoes, peeled and diced
  • 1 can chickpeas, drained and rinsed
  • 4 cups vegetable broth
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
  • 1 bay leaf
  • 1/4 cup fresh parsley, chopped for garnish

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and cook until translucent, about 5 minutes.
  • Stir in minced garlic, smoked paprika, and ground cumin. Cook for another minute.
  • Add diced potatoes, chickpeas, vegetable broth, salt, black pepper, and bay leaf. Bring to a boil.
  • Reduce heat to a simmer and cook until potatoes are tender, about 30 minutes.
  • Remove bay leaf. Adjust seasoning if needed.
  • Garnish with chopped fresh parsley before serving.

Notes:

This stew is perfect for a cozy dinner. Serve with crusty bread.
