Ingredients:  

Main Ingredients

  • 2 lbs Pork shoulder, cut into chunks
  • 1 large Onion, chopped
  • 3 cloves Garlic, minced
  • 2 tbsp Olive oil
  • 1 tsp Thyme
  • 1 tsp Allspice
  • 2 cups Chicken broth
  • 1 can Diced tomatoes
  • 2 cups Carrots, sliced
  • 2 cups Potatoes, diced
  • 1 cup Bell peppers, chopped
  • to taste Salt and pepper

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the pork chunks and brown on all sides.
  • 3. Add the chopped onion and minced garlic, cook until softened.
  • 4. Stir in thyme and allspice, cook for another minute.
  • 5. Pour in the chicken broth and diced tomatoes, bring to a boil.
  • 6. Add the carrots, potatoes, and bell peppers. Reduce heat and simmer for 1 hour or until the pork is tender.
  • 7. Season with salt and pepper to taste. Serve hot.

Notes:

This stew is even better the next day. Store leftovers in the fridge.
