Pork shoulder, cut into chunks

Garlic, minced

Thyme

Allspice

Chicken broth

Diced tomatoes

Salt and pepper
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the pork chunks and brown on all sides.
3. Add the chopped onion and minced garlic, cook until softened.
4. Stir in thyme and allspice, cook for another minute.
5. Pour in the chicken broth and diced tomatoes, bring to a boil.
6. Add the carrots, potatoes, and bell peppers. Reduce heat and simmer for 1 hour or until the pork is tender.
7. Season with salt and pepper to taste. Serve hot.
Notes:
This stew is even better the next day. Store leftovers in the fridge.
