Ingredients:  

Main Ingredients

  • 1 lb beef stew meat cubed
  • 1 lb okra sliced
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 tomatoes chopped
  • 4 cups beef broth
  • 2 tbsp vegetable oil
  • to taste salt
  • to taste pepper

Instructions: 

  • Heat oil in a large pot over medium heat. Add beef and brown on all sides.
  • Add onion and garlic, cook until softened.
  • Stir in tomatoes and cook for a few minutes.
  • Pour in beef broth, bring to a boil, then reduce heat and simmer for 1 hour.
  • Add okra and cook for another 30 minutes.
  • Season with salt and pepper to taste.

Notes:

For a thicker stew, you can add a slurry of cornstarch and water during the last 10 minutes of cooking.
