Instructions:
1. Heat a large pot over medium heat and add a bit of oil.
2. Add the beef stew meat and cook until browned on all sides.
3. Add the chopped onions and garlic, and cook until softened.
4. Pour in the beef broth and bring to a boil.
5. Add the carrots, potatoes, salt, pepper, and thyme.
6. Reduce heat to low and let simmer for about an hour, or until the vegetables are tender.
7. Serve hot and enjoy!
