Ingredients:  

Main Ingredients

  • 1 cup Red Kidney Beans soaked overnight
  • 1 lb Chicken cut into pieces
  • 1 cup Coconut Milk
  • 2 cloves Garlic minced
  • 1 Onion chopped
  • 2 sprigs Thyme
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 2 cups Water

Instructions: 

  • 1. Soak the red kidney beans overnight in water.
  • 2. In a large pot, add the soaked beans and 2 cups of water. Bring to a boil and cook for about 45 minutes.
  • 3. Add the chicken pieces, coconut milk, garlic, onion, thyme, salt, and black pepper to the pot.
  • 4. Reduce the heat and let it simmer for another 45 minutes, or until the chicken is cooked and the beans are tender.
  • 5. Serve hot and enjoy!

Notes:

This dish is best served with rice or dumplings.
