Water
Instructions:
1. Soak the red kidney beans overnight in water.
2. In a large pot, add the soaked beans and 2 cups of water. Bring to a boil and cook for about 45 minutes.
3. Add the chicken pieces, coconut milk, garlic, onion, thyme, salt, and black pepper to the pot.
4. Reduce the heat and let it simmer for another 45 minutes, or until the chicken is cooked and the beans are tender.
5. Serve hot and enjoy!
Notes:
This dish is best served with rice or dumplings.
