Ingredients:  

Ingredients

  • 2 lbs oxtails
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 stalks celery, chopped
  • 1 can diced tomatoes
  • 4 cups beef broth
  • 1 cup rice
  • 2 tbsp vegetable oil
  • 1 tsp thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions: 

  • Heat oil in a large pot over medium heat. Brown oxtails on all sides.
  • Add onions and garlic, cook until softened.
  • Add carrots, celery, diced tomatoes, beef broth, thyme, and bay leaf. Bring to a boil.
  • Reduce heat, cover, and simmer for 1.5 hours.
  • Add rice, cook for another 30 minutes or until rice is tender.
  • Season with salt and pepper to taste.
