Ingredients:  

Main Ingredients

  • 2 lbs Pork backbone
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 3 cups Chicken broth
  • 2 cups Potatoes diced
  • 2 cups Carrots sliced
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 tsp Thyme dried

Instructions: 

  • 1. Heat a large pot over medium heat.
  • 2. Add the pork backbone and brown on all sides.
  • 3. Add the chopped onion and minced garlic, cook until softened.
  • 4. Pour in the chicken broth and bring to a boil.
  • 5. Add the diced potatoes and sliced carrots.
  • 6. Season with salt, black pepper, and dried thyme.
  • 7. Reduce heat to low, cover, and simmer for 2 hours.
  • 8. Serve hot and enjoy!

Notes:

This stew is even better the next day. Store in the fridge and reheat before serving.
