Instructions:
1. Heat a large pot over medium heat.
2. Add the pork backbone and brown on all sides.
3. Add the chopped onion and minced garlic, cook until softened.
4. Pour in the chicken broth and bring to a boil.
5. Add the diced potatoes and sliced carrots.
6. Season with salt, black pepper, and dried thyme.
7. Reduce heat to low, cover, and simmer for 2 hours.
8. Serve hot and enjoy!
Notes:
This stew is even better the next day. Store in the fridge and reheat before serving.
