Vegetable Broth

Chickpeas, drained and rinsed

Ground Cumin

Paprika

Diced Tomatoes

Spinach, chopped
to taste
Salt and Pepper
Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and cook until translucent, about 5 minutes.
3. Stir in minced garlic and cook for another minute.
4. Add vegetable broth, chickpeas, cumin, coriander, paprika, and diced tomatoes. Bring to a boil.
5. Reduce heat and let simmer for 15 minutes.
6. Stir in couscous and chopped spinach. Cover and let sit for 5 minutes.
7. Fluff couscous with a fork and season with salt and pepper to taste. Serve warm.
Notes:
Feel free to add other vegetables like bell peppers or zucchini for extra flavor.
