Ingredients:  

Main Ingredients

  • 1 cup Couscous
  • 2 tbsp Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 2 cups Vegetable Broth
  • 1 can Chickpeas, drained and rinsed
  • 1 tsp Ground Cumin
  • 1 tsp Ground Coriander
  • 1 tsp Paprika
  • 1 cup Diced Tomatoes
  • 1 cup Spinach, chopped
  • to taste Salt and Pepper

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add chopped onion and cook until translucent, about 5 minutes.
  • 3. Stir in minced garlic and cook for another minute.
  • 4. Add vegetable broth, chickpeas, cumin, coriander, paprika, and diced tomatoes. Bring to a boil.
  • 5. Reduce heat and let simmer for 15 minutes.
  • 6. Stir in couscous and chopped spinach. Cover and let sit for 5 minutes.
  • 7. Fluff couscous with a fork and season with salt and pepper to taste. Serve warm.

Notes:

Feel free to add other vegetables like bell peppers or zucchini for extra flavor.
