Ingredients:  

Main Ingredients

  • 2 lbs Pork shoulder, cubed
  • 2 cans Hominy, drained and rinsed
  • 4 cups Chicken broth
  • 1 cup Green chiles, chopped
  • 1 large Onion, diced
  • 3 cloves Garlic, minced
  • 1 tsp Ground cumin
  • 1 tsp Dried oregano
  • to taste Salt and pepper

Instructions: 

  • 1. In a large pot, heat some oil over medium heat. Add the cubed pork and cook until browned on all sides.
  • 2. Add the diced onion and minced garlic to the pot. Cook until the onion is translucent.
  • 3. Stir in the ground cumin and dried oregano. Cook for another minute.
  • 4. Add the chopped green chiles, hominy, and chicken broth. Bring to a boil, then reduce the heat and let it simmer for about 45 minutes.
  • 5. Season with salt and pepper to taste. Serve hot.

Notes:

This stew is perfect for a cold day. Serve with warm tortillas or crusty bread.
